Instructions

  3. Return beef to pot; add potatoes, beef broth, thyme, bay leaf, salt, and pepper; bring to a boil, then simmer 25–30 min until potatoes are tender.
  4. Stir in heavy cream and simmer 5 minutes until sauce thickens slightly; swirl in extra cream in a ribbon pattern off heat for contrast.
  5. Garnish with parsley and serve hot with crusty bread or over mashed potatoes.
  6. Preheat the oven and bake until golden and set; a toothpick should come out clean.
