Ingredients(scaled)

  • 2 salmon fillets (about 6 oz each)
  • ½ 1/4 cup gochujang paste
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 cloves garlic, minced
  • ½ tbsp rice vinegar
  • ½ tbsp sesame oil
  • ½ tsp grated ginger
  • 2 cups cooked steamed rice
  • 2 baby bok choy, halved
  • ½ tbsp vegetable oil
  • ½ Salt and pepper to taste
  • ½ Sesame seeds and sliced green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together gochujang paste, soy sauce, honey, garlic, rice vinegar, sesame oil, and ginger to make the glaze.
  3. Place salmon fillets on a baking sheet lined with parchment paper. Season with salt and pepper.
  4. Brush the glaze generously over the salmon fillets.
  5. Bake the salmon for about 12-15 minutes or until cooked through and glazed.
  6. While the salmon is baking, heat vegetable oil in a pan over medium heat.
  7. Add the bok choy halves and cook for 3-4 minutes on each side until slightly charred and tender.
  8. Serve the gochujang glazed salmon with steamed rice and bok choy.
  9. Garnish with sesame seeds and sliced green onions.
