- 2 medium zucchinis, spiralized into noodles
- ½ lb (450g) mixed seafood (shrimp, scallops, calamari)
- 1 tbsp olive oil
- 1 ½ cloves garlic, minced
- ½ 1/4 cup chicken or seafood broth
- 1 tbsp lemon juice
- ½ 1/4 cup chopped fresh basil
- ½ Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add seafood and cook until opaque (shrimp turning pink, scallops opaque), about 3–4 minutes.
- Stir in broth and lemon juice; simmer 2 minutes.
- Add zucchini noodles and cook 2–3 minutes until just tender.
- Season with salt, pepper, and basil; toss gently and serve immediately.
