Seafood Zucchini Noodles

Ingredients(scaled)

  • 2 medium zucchinis, spiralized into noodles
  • ½ lb (450g) mixed seafood (shrimp, scallops, calamari)
  • 1 tbsp olive oil
  • 1 ½ cloves garlic, minced
  • ½ 1/4 cup chicken or seafood broth
  • 1 tbsp lemon juice
  • ½ 1/4 cup chopped fresh basil
  • ½ Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add seafood and cook until opaque (shrimp turning pink, scallops opaque), about 3–4 minutes.
  4. Stir in broth and lemon juice; simmer 2 minutes.
  5. Add zucchini noodles and cook 2–3 minutes until just tender.
  6. Season with salt, pepper, and basil; toss gently and serve immediately.
