Sourdough Brioche Burger Buns

Ingredients(scaled)

  • ½ 1/2 cup active sourdough starter
  • ½ 1/4 cup warm milk
  • 1 1/4 cups all-purpose flour
  • ½ 1/4 cup sugar
  • ½ 1/2 tsp salt
  • 1 large eggs
  • ½ 1/4 cup unsalted butter, softened
  • ½ egg yolk for egg wash
  • ½ Sesame seeds for topping (optional)

Instructions

  1. In a large bowl, mix the sourdough starter, warm milk, and 1 cup of flour. Cover and let it rest for 1 hour.
  2. Add the sugar, salt, eggs, and butter to the mixture. Stir well.
  3. Gradually add the remaining flour until the dough comes together.
  4. Knead the dough for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise for 2-3 hours until doubled in size.
  6. Punch down the dough and divide it into 4 equal parts. Shape each part into a bun.
  7. Place the buns on a baking sheet lined with parchment paper. Cover and let them rise for another 1-2 hours.
  8. Preheat the oven to 375°F (190°C).
  9. Brush the buns with egg yolk and sprinkle sesame seeds on top.
  10. Bake for 18-20 minutes until the buns are golden brown and sound hollow when tapped.
  11. Allow the buns to cool before slicing and using for burgers.
