Sourdough Brioche Burger Buns

- ½ 1/2 cup active sourdough starter
- ½ 1/4 cup warm milk
- 1 1/4 cups all-purpose flour
- ½ 1/4 cup sugar
- ½ 1/2 tsp salt
- 1 large eggs
- ½ 1/4 cup unsalted butter, softened
- ½ egg yolk for egg wash
- ½ Sesame seeds for topping (optional)
Instructions
- In a large bowl, mix the sourdough starter, warm milk, and 1 cup of flour. Cover and let it rest for 1 hour.
- Add the sugar, salt, eggs, and butter to the mixture. Stir well.
- Gradually add the remaining flour until the dough comes together.
- Knead the dough for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise for 2-3 hours until doubled in size.
- Punch down the dough and divide it into 4 equal parts. Shape each part into a bun.
- Place the buns on a baking sheet lined with parchment paper. Cover and let them rise for another 1-2 hours.
- Preheat the oven to 375°F (190°C).
- Brush the buns with egg yolk and sprinkle sesame seeds on top.
- Bake for 18-20 minutes until the buns are golden brown and sound hollow when tapped.
- Allow the buns to cool before slicing and using for burgers.
