Lemon Herb Baked Salmon
A light and flavorful baked salmon dish infused with lemon and herbs, perfect when paired with crispy roasted potatoes for a satisfying meal for four.

- 2 salmon fillets (6 oz each, skin-on or off)
- 1 tablespoons olive oil
- 1 cloves garlic, minced
- ½ lemon, sliced
- ½ tablespoon fresh lemon juice
- ½ teaspoon lemon zest
- ½ teaspoon fresh thyme, chopped
- ½ teaspoon fresh dill, chopped
- ½ Salt and pepper to taste
- ¾ lbs baby potatoes, halved
- 1 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, thyme, dill, salt, and pepper.
- Place the salmon fillets on the prepared baking sheet. Brush the lemon herb mixture over the salmon.
- Top each fillet with a couple of lemon slices.
- Bake the salmon for 12-15 minutes or until cooked through and flakes easily with a fork.
- While the salmon is baking, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the potatoes on a separate baking sheet and roast in the oven for 20-25 minutes or until golden and crispy.
- Serve the lemon herb baked salmon with the roasted potatoes on the side. Enjoy!
