Lemon Herb Baked Salmon

A light and flavorful baked salmon dish infused with lemon and herbs, perfect when paired with crispy roasted potatoes for a satisfying meal for four.

Ingredients(scaled)

  • 2 salmon fillets (6 oz each, skin-on or off)
  • 1 tablespoons olive oil
  • 1 cloves garlic, minced
  • ½ lemon, sliced
  • ½ tablespoon fresh lemon juice
  • ½ teaspoon lemon zest
  • ½ teaspoon fresh thyme, chopped
  • ½ teaspoon fresh dill, chopped
  • ½ Salt and pepper to taste
  • ¾ lbs baby potatoes, halved
  • 1 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix olive oil, garlic, lemon juice, lemon zest, thyme, dill, salt, and pepper.
  3. Place the salmon fillets on the prepared baking sheet. Brush the lemon herb mixture over the salmon.
  4. Top each fillet with a couple of lemon slices.
  5. Bake the salmon for 12-15 minutes or until cooked through and flakes easily with a fork.
  6. While the salmon is baking, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  7. Spread the potatoes on a separate baking sheet and roast in the oven for 20-25 minutes or until golden and crispy.
  8. Serve the lemon herb baked salmon with the roasted potatoes on the side. Enjoy!
