Turkey Avocado Burger with Corn on the Cob

- ½ lb ground turkey
- ½ 1/2 cup breadcrumbs
- ½ 1/4 cup grated Parmesan cheese
- ½ 1/4 cup chopped fresh parsley
- ½ 1/2 tsp garlic powder
- ½ 1/2 tsp onion powder
- ½ Salt and pepper to taste
- ½ avocado, sliced
- 2 burger buns, toasted
- 2 leaves of lettuce
- 2 slices of tomato
- 2 slices of red onion
- 2 corn on the cob, husked
- 1 tbsp butter, melted
- ½ 1/2 tsp smoked paprika
- ½ 1/2 tsp chili powder
- ½ 1/4 cup grated Parmesan cheese
- ½ Salt and pepper to taste
Instructions
- Preheat grill or grill pan over medium-high heat.
- In a bowl, mix ground turkey, breadcrumbs, Parmesan, parsley, garlic powder, onion powder, salt, and pepper. Form into 4 patties.
- Grill turkey patties for about 6-7 minutes per side or until fully cooked.
- While the patties are cooking, prepare the corn on the cob. Mix melted butter with smoked paprika, chili powder, Parmesan, salt, and pepper in a bowl.
- Brush the seasoned butter mixture over each corn cob.
- Grill the corn cobs for about 10-12 minutes, turning occasionally, until charred and cooked through.
- Assemble the burgers by placing a turkey patty on each bun, topping with avocado slices, lettuce, tomato, and red onion.
- Serve the turkey avocado burgers with grilled corn on the cob.
