Tofu and Edamame Salad

Ingredients(scaled)

  • 4 oz firm tofu, cubed
  • ½ cup shelled edamame, cooked
  • 2 cups mixed salad greens (e.g., spinach, arugula)
  • ½ 1/2 English cucumber, thinly sliced
  • ½ 1/4 cup sliced radishes
  • ½ 1/4 cup cherry tomatoes, halved
  • 1 ½ tbsp rice vinegar
  • 1 tbsp soy sauce
  • ½ tbsp sesame oil
  • ½ tbsp honey or maple syrup
  • ½ tsp grated ginger
  • ½ clove garlic, minced
  • ½ Salt and pepper to taste
  • 1 tbsp sesame seeds
  • 1 green onions, sliced
  • ½ Lime wedges for garnish

Instructions

  1. In a large bowl, combine salad greens, cucumber, radishes, and cherry tomatoes.
  2. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, honey or maple syrup, ginger, garlic, salt, and pepper to make the dressing.
  3. Heat a pan over medium heat and lightly pan-fry the tofu cubes until golden brown on all sides.
  4. Add cooked edamame and tofu to the salad bowl.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Sprinkle sesame seeds and green onions on top.
  7. Serve the salad with lime wedges on the side for an extra burst of flavor.
