Tofu and Edamame Salad

- 4 oz firm tofu, cubed
- ½ cup shelled edamame, cooked
- 2 cups mixed salad greens (e.g., spinach, arugula)
- ½ 1/2 English cucumber, thinly sliced
- ½ 1/4 cup sliced radishes
- ½ 1/4 cup cherry tomatoes, halved
- 1 ½ tbsp rice vinegar
- 1 tbsp soy sauce
- ½ tbsp sesame oil
- ½ tbsp honey or maple syrup
- ½ tsp grated ginger
- ½ clove garlic, minced
- ½ Salt and pepper to taste
- 1 tbsp sesame seeds
- 1 green onions, sliced
- ½ Lime wedges for garnish
Instructions
- In a large bowl, combine salad greens, cucumber, radishes, and cherry tomatoes.
- In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, honey or maple syrup, ginger, garlic, salt, and pepper to make the dressing.
- Heat a pan over medium heat and lightly pan-fry the tofu cubes until golden brown on all sides.
- Add cooked edamame and tofu to the salad bowl.
- Drizzle the dressing over the salad and toss gently to combine.
- Sprinkle sesame seeds and green onions on top.
- Serve the salad with lime wedges on the side for an extra burst of flavor.
