- ½ 1/4 cup soy sauce
- 1 tablespoons honey
- 1 tablespoons olive oil
- 1 cloves garlic, minced
- ½ teaspoon ginger, grated
- ½ teaspoon paprika
- ½ 1/2 teaspoon black pepper
- ½ pound chicken breast, cut into chunks
- 1 cups pineapple chunks
- ½ red bell pepper, cut into chunks
- ½ red onion, cut into chunks
- ½ Cooked white or brown rice
- ½ Chopped cilantro for garnish
- ½ Lime wedges
Instructions
- In a bowl, mix all marinade ingredients.
- Add chicken chunks to the marinade, cover, and refrigerate for at least 1 hour.
- Preheat grill to medium-high heat.
- Thread marinated chicken, pineapple, bell pepper, and onion onto skewers.
- Grill skewers for about 10-15 minutes, turning occasionally, until chicken is cooked through and pineapple is slightly caramelized.
- Serve the skewers over cooked rice, garnished with chopped cilantro and lime wedges.
