Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat; sauté onion and bell pepper 3–4 minutes until soft.
  2. Add cumin, chili powder, and salt; stir 30 seconds until fragrant.
  3. Spread 1/4 of the filling on one half of a tortilla; top with 1/4 cup cheese and a portion of chicken or corn.
  4. Fold tortilla over, press to seal, and cook 2–3 minutes per side until golden and cheese melts; repeat with remaining tortillas.
  5. Slice into wedges; serve with lime if desired.
