Instructions

  1. Rinse lentils, combine with 3 cups water in a pot, bring to a boil, simmer 15-18 minutes until tender; drain and mash lightly.
  2. In a skillet, sauté onion and garlic in 1 tablespoon olive oil until soft, about 4 minutes.
  3. In a bowl, mix mashed lentils, sautéed onion, garlic, cranberries, breadcrumbs, parsley, cumin, paprika, cayenne, salt, and pepper; form into 8 small patties.
  4. Heat 2 tablespoons olive oil in a skillet over medium heat; cook patties 3-4 minutes per side until golden and heated through.
  5. Prepare cranberry glaze: simmer 1/4 cup chopped cranberries with 2 tablespoons water and 1 tablespoon sugar (optional) until jammy, about 5 minutes; mash slightly.
  6. Brush patties with a light coat of cranberry glaze and simmer 1 minute to set; or serve glaze on top as a sauce.
  7. Toast slider buns lightly, place patties on buns, add extra cranberry glaze if desired.
  8. Preheat the oven and bake until golden and set; a toothpick should come out clean.
