- ½ russet potato, cubed
- ½ sweet potato, cubed
- 1 red onions, sliced
- ½ sweet onion, sliced
- ½ block of tofu, cubed
- 1 ½ red bell peppers, sliced
- ½ head of garlic, cloves peeled
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine all the prepared vegetables, tofu, and garlic cloves.
- Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
- Spread the mixture onto the prepared baking sheet in a single layer.
- Roast in the oven for 40-45 minutes, or until the potatoes are tender and slightly crispy.
- Remove from the oven and serve hot.
