Ingredients(scaled)

  • ½ russet potato, cubed
  • ½ sweet potato, cubed
  • 1 red onions, sliced
  • ½ sweet onion, sliced
  • ½ block of tofu, cubed
  • 1 ½ red bell peppers, sliced
  • ½ head of garlic, cloves peeled

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine all the prepared vegetables, tofu, and garlic cloves.
  3. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
  4. Spread the mixture onto the prepared baking sheet in a single layer.
  5. Roast in the oven for 40-45 minutes, or until the potatoes are tender and slightly crispy.
  6. Remove from the oven and serve hot.
