  • cup all‑purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • egg egg
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh blueberries
  • 1 ⅓ tbsp all‑purpose flour (for blueberries)
  • 1 ⅓ tbsp cold butter
  • 1 ⅓ tbsp flour
  • 1 ⅓ tbsp brown sugar
  • 1/4 tsp cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line 6 muffin cups with liners.
  2. In a bowl, mix 1 cup flour, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk buttermilk, oil, egg, and vanilla. Combine wet and dry ingredients.
  4. Toss blueberries with 2 tbsp flour to coat, then fold into the batter gently.
  5. Divide batter among muffin cups. Mix 2 tbsp flour, brown sugar, cinnamon, and cold butter to make crumble; sprinkle over muffins.
  6. Bake for 18–20 minutes until a toothpick comes out clean. Cool before serving.
