Rainbow Veggie Stir-Fry with Tofu

Ingredients
- 1 block (14 oz) extra-firm tofu, pressed and cubed
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas, etc.)
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 1 Salt and pepper to taste
- 1 Cooked rice or noodles for serving
Instructions
- In a bowl, mix soy sauce, hoisin sauce, cornstarch, garlic, and ginger. Add tofu cubes and let marinate for 10 minutes.
- Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook until browned on all sides. Remove tofu from the pan and set aside.
- In the same pan, add another tbsp of oil. Add mixed vegetables and stir-fry for 5-7 minutes until slightly tender.
- Return the tofu to the pan with the vegetables. Season with salt and pepper. Stir well to combine and heat through.
- Serve the rainbow veggie stir-fry over cooked rice or noodles.
