Rainbow Veggie Stir-Fry with Tofu

Ingredients

  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas, etc.)
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 Salt and pepper to taste
  • 1 Cooked rice or noodles for serving

Instructions

  1. In a bowl, mix soy sauce, hoisin sauce, cornstarch, garlic, and ginger. Add tofu cubes and let marinate for 10 minutes.
  2. Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook until browned on all sides. Remove tofu from the pan and set aside.
  3. In the same pan, add another tbsp of oil. Add mixed vegetables and stir-fry for 5-7 minutes until slightly tender.
  4. Return the tofu to the pan with the vegetables. Season with salt and pepper. Stir well to combine and heat through.
  5. Serve the rainbow veggie stir-fry over cooked rice or noodles.
