Ingredients(scaled)

  • ½ block (14 oz) extra-firm tofu, pressed and cubed
  • ½ tbsp olive oil
  • ½ tbsp chipotle powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • ½ 1/2 tsp paprika
  • ½ Salt and pepper to taste
  • ½ cup cooked quinoa or rice
  • ½ can (15 oz) black beans, drained and rinsed
  • ½ cup corn kernels
  • ½ cup cherry tomatoes, halved
  • ½ avocado, sliced
  • ½ 1/4 cup chopped fresh cilantro
  • ½ Lime wedges for serving

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, toss the tofu cubes with olive oil, chipotle powder, cumin, garlic powder, paprika, salt, and pepper until well coated.
  3. Place the seasoned tofu in the air fryer basket in a single layer. Air fry for 15-18 minutes, shaking halfway through, until crispy.
  4. Assemble the burrito bowls by dividing the quinoa or rice among four bowls.
  5. Top each bowl with black beans, corn, cherry tomatoes, avocado slices, and the air-fried chipotle tofu.
  6. Sprinkle fresh cilantro over the bowls and serve with lime wedges.
  7. Drizzle with chipotle dressing or your favorite salsa, if desired.
