- ½ block (14 oz) extra-firm tofu, pressed and cubed
- ½ tbsp olive oil
- ½ tbsp chipotle powder
- ½ tsp cumin
- ½ tsp garlic powder
- ½ 1/2 tsp paprika
- ½ Salt and pepper to taste
- ½ cup cooked quinoa or rice
- ½ can (15 oz) black beans, drained and rinsed
- ½ cup corn kernels
- ½ cup cherry tomatoes, halved
- ½ avocado, sliced
- ½ 1/4 cup chopped fresh cilantro
- ½ Lime wedges for serving
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, toss the tofu cubes with olive oil, chipotle powder, cumin, garlic powder, paprika, salt, and pepper until well coated.
- Place the seasoned tofu in the air fryer basket in a single layer. Air fry for 15-18 minutes, shaking halfway through, until crispy.
- Assemble the burrito bowls by dividing the quinoa or rice among four bowls.
- Top each bowl with black beans, corn, cherry tomatoes, avocado slices, and the air-fried chipotle tofu.
- Sprinkle fresh cilantro over the bowls and serve with lime wedges.
- Drizzle with chipotle dressing or your favorite salsa, if desired.
