  • 6 oz linguine pasta
  • 1 ⅓ cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 ⅓ tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • Grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Lemon wedges
  • 4 oz grilled shrimp or scallops (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cherry tomatoes with garlic, olive oil, salt, pepper, and red pepper flakes. Roast for 20 minutes.
  3. Cook linguine according to package instructions; reserve 1/2 cup pasta water.
  4. Combine cooked pasta with roasted tomatoes, fresh basil, and a splash of pasta water.
  5. Serve with grilled shrimp or scallops if desired, topped with Parmesan, basil, and a squeeze of lemon.
