Ingredients(scaled)

  • 6 oz ziti pasta
  • 1 cups marinara sauce
  • ½ cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • ½ 1/2 cup grated Parmesan cheese
  • ½ bell pepper, chopped
  • ½ zucchini, chopped
  • ½ cup sliced mushrooms
  • 1 tbsp olive oil
  • 1 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cook pasta in salted boiling water until al dente, about 8 minutes. Drain and set aside.
  2. In a pan, heat olive oil over medium; sauté garlic, bell pepper, zucchini, and mushrooms until tender, about 5 minutes.
  3. Mix cooked pasta, sautéed vegetables, marinara, ricotta, basil, oregano, salt, and pepper in a large bowl.
  4. Transfer mixture to a greased baking dish; sprinkle mozzarella and Parmesan on top.
  5. Bake uncovered for 20-25 minutes until bubbly and golden brown.
