Instructions

  1. In a bowl, mix ground bison with smoked paprika, cumin, garlic powder, chili powder, salt, and pepper. Form into 4 patties about 3/4 inch thick.
  2. Preheat a skillet over medium-high heat and brush with olive oil. Cook patties 4 minutes per side for medium-rare to medium, topping with cheese in the last minute if using; patty should have a deep sear.
  3. Meanwhile, whisk together 1/2 cup mayo with 1–2 chipotle peppers minced and 1 teaspoon adobo sauce to make chipotle mayo; adjust heat to taste.
  4. Assemble: spread chipotle mayo on buns, add lettuce, patty, and top bun; serve hot with extra mayo on the side if desired.
