    • ½ 1/4 yellow onion, diced
    • ½ clove garlic, minced
    • ½ tbsp olive oil
    • ½ Pinch of paprika
    • ½ Pinch of dried thyme
    • ½ Salt and pepper to taste

    Instructions

    1. In a large skillet, heat olive oil over medium heat.
    2. Add sausage, breaking it up with a spatula and cook until browned.
    3. Add onions, garlic, sweet potatoes, and bell pepper. Cook until vegetables are tender.
    4. Season with paprika, thyme, salt, and pepper. Cook for an additional 5 minutes.
    5. Garnish with chopped parsley before serving.
