- ½ large sweet potato, peeled and diced
- 1 bell peppers (assorted colors), chopped
- ½ red onion, sliced
- 1 zucchinis, sliced
- ½ cup cherry tomatoes
- 1 ½ tbsp olive oil
- 1 tbsp Cajun seasoning
- ½ Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine all the chopped vegetables.
- Drizzle olive oil over the vegetables and sprinkle with Cajun seasoning, salt, and pepper. Toss well to coat.
- Spread the vegetables in a single layer on the prepared baking sheet.
