Ingredients(scaled)

  • ½ large sweet potato, peeled and diced
  • 1 bell peppers (assorted colors), chopped
  • ½ red onion, sliced
  • 1 zucchinis, sliced
  • ½ cup cherry tomatoes
  • 1 ½ tbsp olive oil
  • 1 tbsp Cajun seasoning
  • ½ Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine all the chopped vegetables.
  3. Drizzle olive oil over the vegetables and sprinkle with Cajun seasoning, salt, and pepper. Toss well to coat.
  4. Spread the vegetables in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
  6. Remove from the oven and let cool slightly before serving.
