  • ½ cup canned crushed tomatoes
  • ½ cup heavy cream
  • ½ cup canned chickpeas, rinsed and drained
  • ½ cup basmati rice
  • ¾ cups chicken broth

  • ½ Juice of 1/2 lemon
  • 1 tablespoons chopped fresh cilantro (for garnish)
  • ½ Pinch saffron threads (optional, for rice aroma)

Instructions

  2. Heat 1 tbsp ghee and 1 tsp olive oil in a large skillet over medium heat; add chicken, season with salt, and cook until lightly browned, 5–6 minutes. Remove and set aside.
  3. In same skillet, add onion; sauté 4–5 minutes until translucent. Add garlic and ginger; cook 1 minute until fragrant.
  4. Stir in garam masala, coriander, paprika, and chili flakes; cook 30 seconds to bloom spices.
  5. Add crushed tomatoes; simmer 3 minutes, then return chicken with any resting juices; stir in cream and chickpeas; simmer 6–8 minutes until chicken is cooked through and sauce thickens.
  6. Finish with lemon juice; adjust salt and pepper. Serve over saffron rice and garnish with cilantro.
