Ingredients(scaled)

  • 2 large whole wheat flatbreads or tortillas
  • 1 cups chopped mixed vegetables (bell peppers, tomatoes, onions)
  • ½ tbsp oil
  • ½ tsp cumin seeds
  • ½ 1/2 tsp turmeric powder
  • ½ 1/2 tsp garam masala
  • ½ 1/2 tsp chili powder
  • ½ 1/2 tsp salt
  • ½ 1/4 tsp black pepper
  • ½ 1/4 cup chopped fresh cilantro
  • ½ 1/2 cup plain yogurt (for serving)

Instructions

  1. Heat oil in a skillet over medium heat. Add cumin seeds and let them sizzle.
  2. Add vegetables, turmeric, garam masala, chili powder, salt, and pepper. Cook until vegetables are tender, about 5–7 minutes.
  3. Stir in cilantro. Remove from heat.
  4. Warm flatbreads/tortillas; spoon vegetable mixture onto each.
  5. Roll up tightly; serve with yogurt on the side.
