Cheesy Black Bean and Corn Quesadillas

- 4 pieces tortillas (flour or corn)
- ⅔ cup cooked black beans
- ⅔ cup frozen or fresh corn kernels
- ⅔ cup shredded cheddar cheese
- ⅓ cup diced red bell pepper
- ⅛ cup diced green onion
- ⅔ tbsp olive oil or vegetable oil
- ⅛ tsp salt
- ⅓ tsp ground cumin
- ⅔ tbsp fresh lime juice (optional)
Instructions
- In a bowl, mash the black beans slightly and mix in corn, red bell pepper, green onion, salt, and cumin.
- Place a tortilla on a hot skillet with a little oil. Add a layer of the bean mixture and sprinkle with cheddar cheese. Top with another tortilla.
- Cook until the bottom tortilla is golden and cheese begins to melt, then flip and cook the other side until crisp and cheese is fully melted.
- Repeat with remaining tortillas and filling to make 3 quesadillas.
- Slice into wedges, drizzle with lime juice if desired, and serve warm.
