Herb-Crusted Baked Salmon with Herbed Baby Potatoes

- 2 salmon fillets (6 oz each)
- 1 tbsp olive oil
- ½ 1/2 cup breadcrumbs
- 1 tbsp chopped fresh parsley
- ½ tbsp chopped fresh dill
- ½ tbsp lemon zest
- ½ Salt and pepper to taste
- ½ lb baby potatoes, halved
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp dried thyme
- ½ Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a small bowl, mix breadcrumbs, parsley, dill, lemon zest, salt, and pepper.
- Place salmon fillets on the prepared baking sheet. Brush each fillet with olive oil and press the herb breadcrumb mixture on top of each fillet.
- Toss halved baby potatoes with olive oil, garlic powder, dried thyme, salt, and pepper. Spread them on the baking sheet around the salmon fillets.
- Bake in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and the potatoes are tender.
- Serve the herb-crusted salmon with the herbed baby potatoes. Enjoy!
