Ingredients(scaled)

  • ½ cup Arborio rice
  • ½ onion, finely chopped
  • 1 cloves garlic, minced
  • ½ red bell pepper, sliced
  • ½ tomato, diced
  • ½ 1/2 cup frozen peas
  • 2 cups seafood or vegetable broth
  • ½ 1/2 tsp saffron threads
  • ½ 1/2 tsp smoked paprika
  • ½ 1/2 tsp dried oregano
  • ½ Salt and pepper to taste
  • ½ 1/4 cup olive oil
  • 6 large shrimp, peeled and deveined
  • 6 mussels, cleaned
  • 6 clams, scrubbed
  • ½ Lemon wedges for serving
  • ½ Chopped fresh parsley for garnish

Instructions

  1. In a small bowl, crush saffron threads and mix with warm broth. Let it infuse for 10 minutes.
  2. Heat olive oil in a large paella pan or skillet over medium heat. Add onion, garlic, and bell pepper. Cook until softened.
  3. Stir in smoked paprika, oregano, and rice. Cook for 2 minutes, stirring frequently.
  4. Pour in the saffron-infused broth. Season with salt and pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.
  5. Arrange shrimp, mussels, clams, tomato, and peas over the rice. Cover and cook for another 10-15 minutes until the seafood is cooked and the rice is tender.
  6. Once the seafood is cooked and the rice has absorbed the liquid, remove from heat. Let it rest for a few minutes.
  7. Garnish with chopped parsley and serve with lemon wedges.
