- ½ cup Arborio rice
- ½ onion, finely chopped
- 1 cloves garlic, minced
- ½ red bell pepper, sliced
- ½ tomato, diced
- ½ 1/2 cup frozen peas
- 2 cups seafood or vegetable broth
- ½ 1/2 tsp saffron threads
- ½ 1/2 tsp smoked paprika
- ½ 1/2 tsp dried oregano
- ½ Salt and pepper to taste
- ½ 1/4 cup olive oil
- 6 large shrimp, peeled and deveined
- 6 mussels, cleaned
- 6 clams, scrubbed
- ½ Lemon wedges for serving
- ½ Chopped fresh parsley for garnish
Instructions
- In a small bowl, crush saffron threads and mix with warm broth. Let it infuse for 10 minutes.
- Heat olive oil in a large paella pan or skillet over medium heat. Add onion, garlic, and bell pepper. Cook until softened.
- Stir in smoked paprika, oregano, and rice. Cook for 2 minutes, stirring frequently.
- Pour in the saffron-infused broth. Season with salt and pepper. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.
- Arrange shrimp, mussels, clams, tomato, and peas over the rice. Cover and cook for another 10-15 minutes until the seafood is cooked and the rice is tender.
- Once the seafood is cooked and the rice has absorbed the liquid, remove from heat. Let it rest for a few minutes.
- Garnish with chopped parsley and serve with lemon wedges.
