  • 2 boneless, skinless chicken breasts
  • ½ tbsp olive oil
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ Salt and pepper to taste
  • ½ For the salsa:
  • ½ ripe mango, diced
  • ½ ripe avocado, diced
  • ½ 1/2 red onion, finely chopped
  • ½ 1/4 cup fresh cilantro, chopped
  • ½ jalapeño, seeded and minced
  • ½ Juice of 1 lime

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Rub chicken breasts with olive oil, cumin, paprika, salt, and pepper.
  3. Grill chicken for about 6-7 minutes per side or until cooked through.
  4. In a bowl, combine diced mango, avocado, red onion, cilantro, jalapeño, lime juice, salt, and pepper to make the salsa.
