Instructions

  1. Heat a large skillet over medium heat; add turkey bacon and cook until crisp, 6–7 minutes, stirring occasionally. Transfer to paper towels to drain.
  2. In a bowl, whisk eggs, milk, chili powder, cumin, salt, and pepper.
  3. Pour egg mixture into the same skillet; scramble until just set, about 2–3 minutes.
  4. Warm tortillas in a dry skillet for 20–30 seconds per side or wrap in foil and heat in oven at 350°F (175°C) for 5 minutes.
  5. Crumble turkey bacon into the eggs and mix gently; spoon onto tortillas.
  6. Top with cheese and salsa, then add avocado slices and cilantro if using.
