Tempeh Tacos with Mango Salsa

Ingredients(scaled)

  • 4 oz tempeh, crumbled
  • ½ tablespoon olive oil
  • ½ small onion, diced
  • 1 cloves garlic, minced
  • ½ tablespoon chili powder
  • ½ teaspoon cumin
  • ½ 1/2 teaspoon paprika
  • ½ 1/2 teaspoon garlic powder
  • ½ 1/2 teaspoon onion powder
  • ½ Salt and pepper to taste
  • 4 small corn tortillas
  • ½ Mango Salsa:
  • ½ ripe mango, diced
  • ½ 1/2 red bell pepper, diced
  • ½ 1/4 cup red onion, finely chopped
  • ½ 1/4 cup fresh cilantro, chopped
  • ½ Juice of 1 lime
  • ½ Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until translucent.
  2. Crumble the tempeh into the skillet and cook for about 5 minutes until slightly browned.
  3. Add chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Stir well to combine and cook for another 2-3 minutes.
  4. In a bowl, combine diced mango, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to make the salsa. Mix well.
  5. Warm the corn tortillas in a dry skillet or microwave.
  6. Fill each tortilla with the tempeh mixture and top with mango salsa.
  7. Serve the tempeh tacos with extra salsa on the side.
