- 4 oz tempeh, crumbled
- ½ tablespoon olive oil
- ½ small onion, diced
- 1 cloves garlic, minced
- ½ tablespoon chili powder
- ½ teaspoon cumin
- ½ 1/2 teaspoon paprika
- ½ 1/2 teaspoon garlic powder
- ½ 1/2 teaspoon onion powder
- ½ Salt and pepper to taste
- 4 small corn tortillas
- ½ Mango Salsa:
- ½ ripe mango, diced
- ½ 1/2 red bell pepper, diced
- ½ 1/4 cup red onion, finely chopped
- ½ 1/4 cup fresh cilantro, chopped
- ½ Juice of 1 lime
- ½ Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until translucent.
- Crumble the tempeh into the skillet and cook for about 5 minutes until slightly browned.
- Add chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Stir well to combine and cook for another 2-3 minutes.
- In a bowl, combine diced mango, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to make the salsa. Mix well.
- Warm the corn tortillas in a dry skillet or microwave.
- Fill each tortilla with the tempeh mixture and top with mango salsa.
- Serve the tempeh tacos with extra salsa on the side.
