- 5 ⅓ oz fettuccine or pasta of choice
- 8 oz skinless salmon fillet, cut into cubes
- ⅓ tsp salt
- ⅙ tsp black pepper
- ⅓ tsp garlic powder
- ⅔ tbsp olive oil
- ⅓ cup basil pesto
- ⅓ cup heavy cream
- ⅙ cup grated Parmesan cheese
- 1 ⅓ cups fresh spinach leaves
- ⅙ cup sun-dried tomatoes, chopped
- Fresh basil leaves
- Grated Parmesan cheese
- Red pepper flakes (optional)
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Season salmon with salt, pepper, and garlic powder. In a skillet, heat olive oil and cook salmon until browned and cooked through, about 4-5 minutes. Remove from skillet and set aside.
- In the same skillet, combine basil pesto, heavy cream, and Parmesan cheese. Cook over low heat until heated through and slightly thickened, about 2-3 minutes.
- Add cooked pasta, spinach, sun-dried tomatoes, and cooked salmon to the skillet. Toss to combine and heat through, about 2 minutes.
- Serve hot, garnished with fresh basil, Parmesan cheese, and red pepper flakes if desired.
