Ingredients(scaled)

  • 5 ⅓ oz fettuccine or pasta of choice
  • 8 oz skinless salmon fillet, cut into cubes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • tbsp olive oil
  • 1/2 cup basil pesto
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 ⅓ cups fresh spinach leaves
  • 1/4 cup sun-dried tomatoes, chopped
  • Fresh basil leaves
  • Grated Parmesan cheese
  • Red pepper flakes (optional)

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. Season salmon with salt, pepper, and garlic powder. In a skillet, heat olive oil and cook salmon until browned and cooked through, about 4-5 minutes. Remove from skillet and set aside.
  3. In the same skillet, combine basil pesto, heavy cream, and Parmesan cheese. Cook over low heat until heated through and slightly thickened, about 2-3 minutes.
  4. Add cooked pasta, spinach, sun-dried tomatoes, and cooked salmon to the skillet. Toss to combine and heat through, about 2 minutes.
  5. Serve hot, garnished with fresh basil, Parmesan cheese, and red pepper flakes if desired.
