Vegan Banana Pancakes

Ingredients(scaled)

  • 1 ripe bananas, mashed
  • 1 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ 1/2 tsp salt
  • 1 cups almond milk (or other plant-based milk)
  • ½ tsp vanilla extract
  • 1 tbsp vegetable oil or melted coconut oil

Instructions

  1. In a large bowl, mash ripe bananas until smooth.
  2. Mix in almond milk and vanilla until combined.
  3. In a separate bowl, whisk together flour, sugar, baking powder, and salt.
  4. Pour the wet ingredients into the dry and stir until just combined.
  5. Heat a non-stick skillet or griddle over medium heat; lightly oil.
  6. Pour 1/4 cup batter per pancake onto skillet.
  7. Cook 2-3 minutes until bubbles form and edges look set; flip and cook another 2 minutes.
  8. Serve warm with your favorite toppings.
