- 1 tbsp vegetable oil or melted coconut oil
Instructions
- In a large bowl, mash ripe bananas until smooth.
- Mix in almond milk and vanilla until combined.
- In a separate bowl, whisk together flour, sugar, baking powder, and salt.
- Pour the wet ingredients into the dry and stir until just combined.
- Heat a non-stick skillet or griddle over medium heat; lightly oil.
- Pour 1/4 cup batter per pancake onto skillet.
- Cook 2-3 minutes until bubbles form and edges look set; flip and cook another 2 minutes.
- Serve warm with your favorite toppings.
