Mediterranean Salmon and Potato Bake

Ingredients(scaled)

  • 2 salmon fillets
  • 1 tbsp olive oil
  • 1 cloves garlic, minced
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ½ Salt and pepper to taste
  • ¾ lbs baby potatoes, halved
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ Salt and pepper to taste
  • ½ red bell pepper, sliced
  • ½ yellow bell pepper, sliced
  • ½ red onion, sliced
  • ½ 1/2 cup cherry tomatoes
  • ½ 1/4 cup pitted Kalamata olives
  • ½ tsp dried basil
  • ½ 1/2 tsp red pepper flakes
  • ½ Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a large baking dish.
  2. In a bowl, mix olive oil, garlic, oregano, thyme, salt, and pepper. Coat the salmon fillets with this mixture and let them marinate while preparing the rest.
  3. In another bowl, toss halved potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them in the baking dish.
  4. Place marinated salmon fillets on top of the potatoes in the dish.
  5. Add sliced bell peppers, onion, cherry tomatoes, and olives around the salmon and potatoes.
  6. Sprinkle dried basil, red pepper flakes, salt, and pepper over the entire dish.
  7. Bake in the preheated oven for about 25-30 minutes or until the salmon is cooked through and the potatoes are tender.
  8. Serve hot, garnished with fresh herbs if desired.
