Mediterranean Salmon and Potato Bake

- 2 salmon fillets
- 1 tbsp olive oil
- 1 cloves garlic, minced
- ½ tsp dried oregano
- ½ tsp dried thyme
- ½ Salt and pepper to taste
- ¾ lbs baby potatoes, halved
- 1 tbsp olive oil
- ½ tsp paprika
- ½ tsp garlic powder
- ½ Salt and pepper to taste
- ½ red bell pepper, sliced
- ½ yellow bell pepper, sliced
- ½ red onion, sliced
- ½ 1/2 cup cherry tomatoes
- ½ 1/4 cup pitted Kalamata olives
- ½ tsp dried basil
- ½ 1/2 tsp red pepper flakes
- ½ Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and grease a large baking dish.
- In a bowl, mix olive oil, garlic, oregano, thyme, salt, and pepper. Coat the salmon fillets with this mixture and let them marinate while preparing the rest.
- In another bowl, toss halved potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them in the baking dish.
- Place marinated salmon fillets on top of the potatoes in the dish.
- Add sliced bell peppers, onion, cherry tomatoes, and olives around the salmon and potatoes.
- Sprinkle dried basil, red pepper flakes, salt, and pepper over the entire dish.
- Bake in the preheated oven for about 25-30 minutes or until the salmon is cooked through and the potatoes are tender.
- Serve hot, garnished with fresh herbs if desired.
