Hawaiian Luau Ribs

- 1 racks of baby back ribs
- ½ cup pineapple juice
- ½ 1/2 cup soy sauce
- ½ 1/4 cup brown sugar
- 1 ½ cloves garlic, minced
- ½ tbsp ginger, grated
- ½ 1/2 tsp black pepper
- ½ 1/4 cup ketchup
- 1 tbsp rice vinegar
- ½ 1/2 tsp sesame oil
- ½ Sliced green onions and sesame seeds for garnish
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, ginger, and black pepper to make the marinade.
- Place the ribs in a large baking dish and pour the marinade over them, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight.
- Cover the baking dish with foil and bake the ribs for 1.5 to 2 hours until tender.
- In a saucepan, combine ketchup, rice vinegar, and sesame oil. Simmer for 5-10 minutes until slightly thickened to make the glaze.
- Preheat the grill to medium-high heat. Brush the ribs with the glaze and grill for 5-10 minutes per side, basting with more glaze as needed, until caramelized and slightly charred.
- Slice the ribs between the bones, garnish with sliced green onions and sesame seeds, and serve hot.
