Hawaiian Luau Ribs

Ingredients(scaled)

  • 1 racks of baby back ribs
  • ½ cup pineapple juice
  • ½ 1/2 cup soy sauce
  • ½ 1/4 cup brown sugar
  • 1 ½ cloves garlic, minced
  • ½ tbsp ginger, grated
  • ½ 1/2 tsp black pepper
  • ½ 1/4 cup ketchup
  • 1 tbsp rice vinegar
  • ½ 1/2 tsp sesame oil
  • ½ Sliced green onions and sesame seeds for garnish

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, ginger, and black pepper to make the marinade.
  3. Place the ribs in a large baking dish and pour the marinade over them, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight.
  4. Cover the baking dish with foil and bake the ribs for 1.5 to 2 hours until tender.
  5. In a saucepan, combine ketchup, rice vinegar, and sesame oil. Simmer for 5-10 minutes until slightly thickened to make the glaze.
  6. Preheat the grill to medium-high heat. Brush the ribs with the glaze and grill for 5-10 minutes per side, basting with more glaze as needed, until caramelized and slightly charred.
  7. Slice the ribs between the bones, garnish with sliced green onions and sesame seeds, and serve hot.
