Ingredients(scaled)

  • 4 large romaine lettuce leaves, chopped into small ribbons
  • ½ 1/2 cup finely chopped pork or chicken (optional for non-pork versions: use extra chopped mushrooms)
  • ½ 1/4 cup finely minced onion
  • 1 cloves garlic, minced
  • ½ tablespoon soy sauce
  • ½ teaspoon sesame oil
  • ½ teaspoon grated fresh ginger
  • ½ 1/4 teaspoon white pepper
  • ½ 1/2 cup finely chopped water chestnuts (optional for crunch)
  • 10 round dumpling wrappers (or wonton wrappers), about 3 inches
  • 1 tablespoons neutral oil for brushing
  • ½ tablespoon cornstarch mixed with 2 tablespoons water (slurry for sealing)
  • ½ Sesame seeds, for garnish (optional)

Instructions

  1. 1. In a skillet, heat 1 tsp oil; sauté garlic and onion 2–3 min until translucent, add pork (or mushrooms) and cook until browned, 4–5 min.
  2. 2. Stir in romaine ribbons, water chestnuts, soy sauce, sesame oil, ginger, and white pepper; cook 2–3 min until romaine wilts and flavors meld, cool 5 min.
  3. 3. Place 1 heaping teaspoon filling in center of each wrapper; wet edges, fold to seal into half-moon, pinching with a light seal; repeat.
  4. 4. Brush tops lightly with oil; steam 4 min over a shallow pan of simmering water, then pan-fry 2 min per side until wrappers are lightly golden and crisp.
  5. 5. Serve warm with a dip of soy-sunflower or chili oil; garnish with sesame seeds if desired.

Chef’s Pro Tips

  • Chill filling 10 minutes to help wrapper sealing.
  • Use romaine rib pieces for extra crunch in filling.
  • If wrappers tear, seal with a dab of slurry and pinch firmly.

Serving Suggestions
