- ½ 1/2 red onion, thinly sliced
- ½ 1/4 cup Kalamata olives, pitted
- ½ 1/4 cup crumbled feta cheese
- ½ 1/4 cup fresh parsley, chopped
- ½ 1/4 cup extra-virgin olive oil
- 1 tablespoons red wine vinegar
- ½ teaspoon Dijon mustard
- ½ clove garlic, minced
- ½ teaspoon dried oregano

- 2 pre-cooked chicken thighs, shredded or sliced
Instructions
- In a large salad bowl, combine the mixed greens, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper to make the dressing.
