Vegetarian Baked Ziti with Soyrizo

- 8 oz Ziti pasta
- 8 oz Trader Joe’s soyRizo
- 2 cups Marinara sauce
- ⅔ cup Ricotta cheese
- 1 ⅓ cups Shredded mozzarella
- ⅓ cup Parmesan cheese
- ⅔ tbsp Olive oil
- 1 ⅓ cloves Garlic
- ⅔ tsp Dried oregano
- ⅓ tsp Red pepper flakes
- ⅓ tsp Salt
- ⅛ tsp Black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Cook ziti in salted boiling water until just al dente, per package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté 1 minute. Crumble Trader Joe’s soyRizo into the skillet and cook until lightly browned, about 5 minutes.
- Stir in marinara sauce, oregano, red pepper flakes, salt, and black pepper. Simmer 3–5 minutes to blend flavors.
- In a large mixing bowl, combine cooked ziti, soyRizo sauce, ricotta, and half of the mozzarella. Mix until evenly coated.
- Spread a thin layer of sauce in a 9x13 inch baking dish. Layer half the pasta mixture, then sprinkle with Parmesan. Add remaining pasta mixture and top with remaining mozzarella.
- Cover with foil and bake 20 minutes. Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
- Let stand 5 minutes before serving.
