Ingredients(scaled)

  • ½ lb ground turkey
  • ½ 1/2 cup grated zucchini
  • ½ 1/2 cup grated carrot
  • ½ 1/4 cup finely chopped onion
  • 1 cloves garlic, minced
  • ½ 1/4 cup breadcrumbs
  • ½ egg egg
  • ½ tbsp chopped parsley
  • ½ tsp salt
  • ½ 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. In a large bowl, combine all ingredients until thoroughly mixed.
  3. Form mixture into 1-inch meatballs and place on prepared baking sheet.
  4. Bake 18-20 minutes until cooked through and browned.
  5. Serve warm with your favorite sauce or over rice.
