Slow Cooker Beef Sinigang

- ½ lb beef shank or chuck, cut into chunks
- 4 cups water
- ½ medium onion, quartered
- 1 medium tomatoes, quartered
- ½ daikon radish, peeled and sliced
- ½ eggplant, sliced
- ½ bunch spinach or kangkong (water spinach)
- ½ 2-3 pieces green chili peppers (siling pansigang), optional
- ½ packet sinigang mix (tamarind soup base)
- ½ Fish sauce or salt, to taste
Instructions
- Place beef, water, onion, and tomatoes in the slow cooker.
- Cover and cook on low for 5-6 hours or until beef is tender.
- Skim off any scum that rises to the surface.
- Add daikon radish and eggplant to the slow cooker and cook for an additional hour.
- Stir in sinigang mix until dissolved. Taste and adjust seasoning with fish sauce or salt.
- Add green chili peppers and spinach or kangkong. Cook for another 5-10 minutes until vegetables are tender.
- Serve hot with steamed rice.
