Slow Cooker Beef Sinigang

Ingredients(scaled)

  • ½ lb beef shank or chuck, cut into chunks
  • 4 cups water
  • ½ medium onion, quartered
  • 1 medium tomatoes, quartered
  • ½ daikon radish, peeled and sliced
  • ½ eggplant, sliced
  • ½ bunch spinach or kangkong (water spinach)
  • ½ 2-3 pieces green chili peppers (siling pansigang), optional
  • ½ packet sinigang mix (tamarind soup base)
  • ½ Fish sauce or salt, to taste

Instructions

  1. Place beef, water, onion, and tomatoes in the slow cooker.
  2. Cover and cook on low for 5-6 hours or until beef is tender.
  3. Skim off any scum that rises to the surface.
  4. Add daikon radish and eggplant to the slow cooker and cook for an additional hour.
  5. Stir in sinigang mix until dissolved. Taste and adjust seasoning with fish sauce or salt.
  6. Add green chili peppers and spinach or kangkong. Cook for another 5-10 minutes until vegetables are tender.
  7. Serve hot with steamed rice.
