- ½ cup red lentils, rinsed
- ½ can (14 oz) coconut milk
- ½ onion, diced
- 1 cloves garlic, minced
- ½ tbsp curry powder
- ½ tsp turmeric
- ½ tsp cumin
- 2 cups vegetable broth
- ½ cup diced carrots
- ½ cup diced potatoes
- ½ cup chopped spinach
- ½ Salt and pepper to taste
- ½ Juice of 1 lime
- ½ Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add curry powder, turmeric, and cumin. Stir for 1 minute.
- Add lentils, coconut milk, vegetable broth, carrots, and potatoes. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until lentils and vegetables are tender.
- Stir in chopped spinach and lime juice. Season with salt and pepper.
- Serve hot, garnished with fresh cilantro.
- Pair with a side of crusty bread or rice for a complete meal.
