Ingredients(scaled)

  • ½ cup red lentils, rinsed
  • ½ can (14 oz) coconut milk
  • ½ onion, diced
  • 1 cloves garlic, minced
  • ½ tbsp curry powder
  • ½ tsp turmeric
  • ½ tsp cumin
  • 2 cups vegetable broth
  • ½ cup diced carrots
  • ½ cup diced potatoes
  • ½ cup chopped spinach
  • ½ Salt and pepper to taste
  • ½ Juice of 1 lime
  • ½ Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add curry powder, turmeric, and cumin. Stir for 1 minute.
  3. Add lentils, coconut milk, vegetable broth, carrots, and potatoes. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes or until lentils and vegetables are tender.
  5. Stir in chopped spinach and lime juice. Season with salt and pepper.
  6. Serve hot, garnished with fresh cilantro.
  7. Pair with a side of crusty bread or rice for a complete meal.
