Okra and Tomato Stew

Ingredients(scaled)

  • ½ lb fresh okra, trimmed and sliced
  • ½ onion, finely chopped
  • 1 cloves garlic, minced
  • ½ can (14 oz) diced tomatoes
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ 1/2 tsp smoked paprika
  • ½ 1/4 tsp cayenne pepper (optional)
  • ½ Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 cups vegetable broth
  • ½ Fresh cilantro or parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
  2. Add okra slices to the pot, cook for 5-7 minutes until slightly browned.
  3. Stir in cumin, coriander, paprika, cayenne, salt, and pepper. Cook for another minute until fragrant.
  4. Pour in diced tomatoes and vegetable broth. Bring to a simmer.
  5. Reduce heat to low, cover, and let the stew simmer for 15-20 minutes, stirring occasionally.
  6. Adjust seasoning if needed and serve hot, garnished with fresh cilantro or parsley.
  7. Enjoy the stew on its own or over cooked rice or with crusty bread.
