- ½ lb fresh okra, trimmed and sliced
- ½ onion, finely chopped
- 1 cloves garlic, minced
- ½ can (14 oz) diced tomatoes
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ 1/2 tsp smoked paprika
- ½ 1/4 tsp cayenne pepper (optional)
- ½ Salt and pepper to taste
- 1 tbsp olive oil
- 1 cups vegetable broth
- ½ Fresh cilantro or parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until softened.
- Add okra slices to the pot, cook for 5-7 minutes until slightly browned.
- Stir in cumin, coriander, paprika, cayenne, salt, and pepper. Cook for another minute until fragrant.
- Pour in diced tomatoes and vegetable broth. Bring to a simmer.
- Reduce heat to low, cover, and let the stew simmer for 15-20 minutes, stirring occasionally.
- Adjust seasoning if needed and serve hot, garnished with fresh cilantro or parsley.
- Enjoy the stew on its own or over cooked rice or with crusty bread.
