Mediterranean Seafood Pasta

Ingredients(scaled)

  • ½ 400g spaghetti or linguine
  • ½ 300g mixed seafood (shrimp, scallops, mussels)
  • 1 tbsp olive oil
  • 1 ½ garlic cloves, minced
  • ½ pint cherry tomatoes, halved
  • ½ 1/2 cup black olives, sliced
  • ½ 1/4 cup sun-dried tomatoes, chopped
  • ½ 1/4 cup chopped fresh basil
  • ½ tsp dried oregano
  • ½ Salt and pepper to taste
  • ½ Lemon wedges for serving

Instructions

  1. Cook pasta in salted boiling water until al dente (8-10 min). Drain and set aside.
  2. Meanwhile, heat olive oil in a large skillet over medium heat.
  3. Add garlic; sauté 30 seconds until fragrant. Add cherry tomatoes and sun-dried tomatoes; cook 3-4 min.
  4. Add seafood to skillet; cook 4-5 min until seafood is just done (pink, opaque, and tender).
  5. Stir in olives, basil, oregano, salt, and pepper. Toss cooked pasta into sauce.
  6. Serve immediately with lemon wedges.
