Mediterranean Seafood Pasta

- ½ 400g spaghetti or linguine
- ½ 300g mixed seafood (shrimp, scallops, mussels)
- 1 tbsp olive oil
- 1 ½ garlic cloves, minced
- ½ pint cherry tomatoes, halved
- ½ 1/2 cup black olives, sliced
- ½ 1/4 cup sun-dried tomatoes, chopped
- ½ 1/4 cup chopped fresh basil
- ½ tsp dried oregano
- ½ Salt and pepper to taste
- ½ Lemon wedges for serving
Instructions
- Cook pasta in salted boiling water until al dente (8-10 min). Drain and set aside.
- Meanwhile, heat olive oil in a large skillet over medium heat.
- Add garlic; sauté 30 seconds until fragrant. Add cherry tomatoes and sun-dried tomatoes; cook 3-4 min.
- Add seafood to skillet; cook 4-5 min until seafood is just done (pink, opaque, and tender).
- Stir in olives, basil, oregano, salt, and pepper. Toss cooked pasta into sauce.
- Serve immediately with lemon wedges.
