Ingredients(scaled)

  • ½ lb boneless, skinless chicken breasts
  • ½ tbsp olive oil
  • ½ tsp chili powder
  • ½ tsp cumin
  • ½ 1/2 tsp garlic powder
  • ½ 1/2 tsp onion powder
  • ½ Salt and pepper to taste
  • 4 small corn or flour tortillas
  • ½ Mango Avocado Salsa:
  • ½ ripe mango, diced
  • ½ ripe avocado, diced
  • ½ 1/4 cup red onion, finely chopped
  • ½ 1/4 cup fresh cilantro, chopped
  • ½ jalapeño, seeded and minced
  • ½ Juice of 1 lime
  • ½ Salt and pepper to taste

Instructions

  1. Preheat the grill or skillet over medium-high heat.
  2. In a bowl, mix olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Rub the mixture over the chicken breasts.
  3. Grill or cook the chicken for about 6-7 minutes per side or until fully cooked. Let it rest for a few minutes before slicing into strips.
  4. For the salsa, combine mango, avocado, red onion, cilantro, jalapeño, lime juice, salt, and pepper in a bowl. Mix gently.
  5. Warm the tortillas on the grill or in a dry skillet.
  6. Assemble the tacos by filling each tortilla with sliced chicken and topping with mango avocado salsa.
  7. Serve the tacos with additional lime wedges and cilantro if desired.
