- ½ lb boneless, skinless chicken breasts
- ½ tbsp olive oil
- ½ tsp chili powder
- ½ tsp cumin
- ½ 1/2 tsp garlic powder
- ½ 1/2 tsp onion powder
- ½ Salt and pepper to taste
- 4 small corn or flour tortillas
- ½ Mango Avocado Salsa:
- ½ ripe mango, diced
- ½ ripe avocado, diced
- ½ 1/4 cup red onion, finely chopped
- ½ 1/4 cup fresh cilantro, chopped
- ½ jalapeño, seeded and minced
- ½ Juice of 1 lime
- ½ Salt and pepper to taste
Instructions
- Preheat the grill or skillet over medium-high heat.
- In a bowl, mix olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Rub the mixture over the chicken breasts.
- Grill or cook the chicken for about 6-7 minutes per side or until fully cooked. Let it rest for a few minutes before slicing into strips.
- For the salsa, combine mango, avocado, red onion, cilantro, jalapeño, lime juice, salt, and pepper in a bowl. Mix gently.
- Warm the tortillas on the grill or in a dry skillet.
- Assemble the tacos by filling each tortilla with sliced chicken and topping with mango avocado salsa.
- Serve the tacos with additional lime wedges and cilantro if desired.
