Classic Gingerbread Cookies

Ingredients(scaled)

  • 1 1/4 cups all-purpose flour
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • ½ 1/2 tsp ground cloves
  • ½ 1/4 tsp ground nutmeg
  • ½ 1/4 tsp salt
  • ½ 1/4 tsp baking soda
  • ½ 1/2 cup unsalted butter (softened)
  • ½ 1/2 cup packed brown sugar
  • ½ 1/4 cup unsulfured molasses
  • ½ large egg

Instructions

  1. In a bowl, whisk together flour, spices, salt, and baking soda.
  2. In a separate large bowl, beat butter and sugar until fluffy, about 2 minutes.
  3. Add egg and molasses to the butter mixture; mix well.
  4. Gradually blend in the dry ingredients until dough forms.
  5. Divide into two disks, wrap in plastic, and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Roll out dough on a floured surface to 1/4 inch thick.
  7. Cut shapes with cookie cutters and place on a parchment-lined baking sheet.
  8. Bake 8-10 minutes until edges are firm. Cool before decorating.
