- ½ tsp ground ginger
- ½ tsp ground cinnamon
- ½ 1/2 tsp ground cloves
- ½ 1/4 tsp ground nutmeg
- ½ 1/4 tsp salt
- ½ 1/4 tsp baking soda
- ½ 1/2 cup unsalted butter (softened)
- ½ 1/2 cup packed brown sugar
- ½ 1/4 cup unsulfured molasses
- ½ large egg
Instructions
- In a bowl, whisk together flour, spices, salt, and baking soda.
- In a separate large bowl, beat butter and sugar until fluffy, about 2 minutes.
- Add egg and molasses to the butter mixture; mix well.
- Gradually blend in the dry ingredients until dough forms.
- Divide into two disks, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 350°F (175°C). Roll out dough on a floured surface to 1/4 inch thick.
- Cut shapes with cookie cutters and place on a parchment-lined baking sheet.
- Bake 8-10 minutes until edges are firm. Cool before decorating.
