Ingredients(scaled)

  • ½ large yellow onion, finely chopped
  • 1 cloves garlic, minced
  • ½ tablespoon olive oil
  • ½ cup tomato paste
  • ½ 1/2 cup apple cider vinegar
  • ½ tablespoon brown sugar
  • ½ 1/2 teaspoon smoked paprika
  • ½ 1/4 teaspoon ground cinnamon
  • ½ 1/4 teaspoon ground cloves
  • ½ 1/4 teaspoon onion powder
  • ½ cup water
  • ½ Pinch of black pepper

Instructions

  1. In a pot over medium heat, sauté onion and garlic in olive oil until translucent, about 5 minutes.
  2. Stir in tomato paste and cook 2 minutes until darkened; add vinegar, brown sugar, spices, water, and pepper.
  3. Simmer uncovered for 15 minutes, stirring occasionally, until thickened and glossy.
  4. Puree with an immersion blender until smooth; cook 2 more minutes to meld flavors.
  5. Cool to room temperature, then refrigerate. The ketchup will thicken slightly when chilled.
