- 1 cloves garlic, minced
- ½ tablespoon olive oil
- ½ cup tomato paste
- ½ 1/2 cup apple cider vinegar
- ½ tablespoon brown sugar
- ½ 1/2 teaspoon smoked paprika
- ½ 1/4 teaspoon ground cinnamon
- ½ 1/4 teaspoon ground cloves
- ½ 1/4 teaspoon onion powder
- ½ cup water
- ½ Pinch of black pepper
Instructions
- In a pot over medium heat, sauté onion and garlic in olive oil until translucent, about 5 minutes.
- Stir in tomato paste and cook 2 minutes until darkened; add vinegar, brown sugar, spices, water, and pepper.
- Simmer uncovered for 15 minutes, stirring occasionally, until thickened and glossy.
- Puree with an immersion blender until smooth; cook 2 more minutes to meld flavors.
- Cool to room temperature, then refrigerate. The ketchup will thicken slightly when chilled.
