Potato and Egg Breakfast Skillet

Ingredients
- 2 medium potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 1/2 onion, diced
- 1 1/2 bell pepper, diced
- 4 large eggs
- 1 Salt and pepper to taste
- 1 Fresh herbs for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add diced potatoes and cook until golden brown and crispy, about 15-20 minutes.
- Push the potatoes to one side of the skillet and add onion and bell pepper, cooking until softened.
- Season with salt and pepper.
- Create 4 wells in the potato mixture and crack an egg into each well.
- Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
- Garnish with fresh herbs if desired and serve hot.
