Potato and Egg Breakfast Skillet

Ingredients

  • 2 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 1/2 onion, diced
  • 1 1/2 bell pepper, diced
  • 4 large eggs
  • 1 Salt and pepper to taste
  • 1 Fresh herbs for garnish (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced potatoes and cook until golden brown and crispy, about 15-20 minutes.
  3. Push the potatoes to one side of the skillet and add onion and bell pepper, cooking until softened.
  4. Season with salt and pepper.
  5. Create 4 wells in the potato mixture and crack an egg into each well.
  6. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
  7. Garnish with fresh herbs if desired and serve hot.
