Chipotle Tofu Rice Bowl

Ingredients(scaled)

  • ½ block (14 oz) extra-firm tofu, pressed and cubed
  • 1 chipotle peppers in adobo sauce, minced
  • 1 tbsp adobo sauce (from the can of chipotle peppers)
  • ½ tbsp olive oil
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • ½ 1/2 tsp garlic powder
  • ½ 1/2 tsp onion powder
  • ½ Salt and pepper to taste
  • ½ cup cooked black beans
  • ½ cup corn kernels
  • ½ avocado, sliced
  • ½ cup cooked rice
  • ½ Lime wedges, for serving
  • ½ Fresh cilantro, for garnish

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix minced chipotle peppers, adobo sauce, olive oil, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. Add the cubed tofu to the marinade and toss to coat evenly. Let it marinate for 10-15 minutes.
  4. Place the marinated tofu in the air fryer basket in a single layer. Air fry for 15-20 minutes until crispy, shaking halfway through.
  5. In a bowl, assemble the rice bowl by layering cooked rice, black beans, corn, avocado slices, and crispy chipotle tofu.
  6. Garnish with fresh cilantro and serve with lime wedges for squeezing over the bowl.
