- ½ block (14 oz) extra-firm tofu, pressed and cubed
- 1 chipotle peppers in adobo sauce, minced
- 1 tbsp adobo sauce (from the can of chipotle peppers)
- ½ tbsp olive oil
- ½ tsp ground cumin
- ½ tsp chili powder
- ½ 1/2 tsp garlic powder
- ½ 1/2 tsp onion powder
- ½ Salt and pepper to taste
- ½ cup cooked black beans
- ½ cup corn kernels
- ½ avocado, sliced
- ½ cup cooked rice
- ½ Lime wedges, for serving
- ½ Fresh cilantro, for garnish
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix minced chipotle peppers, adobo sauce, olive oil, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
- Add the cubed tofu to the marinade and toss to coat evenly. Let it marinate for 10-15 minutes.
- Place the marinated tofu in the air fryer basket in a single layer. Air fry for 15-20 minutes until crispy, shaking halfway through.
- In a bowl, assemble the rice bowl by layering cooked rice, black beans, corn, avocado slices, and crispy chipotle tofu.
- Garnish with fresh cilantro and serve with lime wedges for squeezing over the bowl.
