- ½ whole chicken carcass (with some meat left on)
- 1 carrots, chopped
- 1 celery stalks, chopped
- ½ onion, quartered
- 2 cloves garlic, smashed
- 1 bay leaves
- ½ tablespoon whole peppercorns
- ½ tablespoon apple cider vinegar
- 4 cups water
Instructions
- Place the chicken carcass, carrots, celery, onion, garlic, bay leaves, peppercorns, and apple cider vinegar in the Instant Pot.
- Add water, ensuring all ingredients are submerged but not over the max fill line.
- Close the lid, set the valve to sealing, and cook on high pressure for 120 minutes.
- Allow natural pressure release for 15 minutes, then carefully quick release any remaining pressure.
- Using tongs, remove the large chicken bones and vegetables from the broth.
- Strain the broth through a fine mesh sieve or cheesecloth to remove any remaining solids.
- Let the broth cool before storing in containers. Refrigerate for up to 5 days or freeze for longer storage.
- Use the chicken bone broth as a base for soups, stews, or enjoy it on its own.
