Ingredients(scaled)

  • 6 oz ground chicken (or turkey)
  • 2 1/4 tsp salt
  • 2 1/4 tsp black pepper
  • 2 1/4 tsp dried sage
  • 2 1/4 tsp dried thyme
  • 2 1/8 tsp crushed red pepper (optional)
  • 2 small sweet potato, diced
  • 2 tbsp olive oil
  • 2 1/4 small onion, chopped
  • 2 tbsp chopped fresh parsley

Instructions

  1. Mix ground chicken with salt, pepper, sage, thyme, red pepper until well combined.
  2. Form into small sausage patties.
  3. Heat 1/2 tbsp olive oil in a skillet over medium heat.
  4. Cook sausage patties 4-5 minutes per side until browned and cooked through.
  5. In the same skillet, add remaining olive oil, sweet potatoes, and onions.
  6. Sauté sweet potatoes and onions for about 10-12 minutes until tender and slightly caramelized.
  7. Sprinkle parsley and serve sausage with sweet potato hash.
