Sweet Potato and Egg Breakfast Hash

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 4 eggs eggs
  • 2 tablespoons olive oil
  • 1 Salt and pepper to taste
  • 1 Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the diced sweet potatoes and cook until they start to soften, about 8-10 minutes.
  3. Add the diced onion, minced garlic, and red bell pepper to the skillet. Cook until the vegetables are tender, about 5-6 minutes.
  4. Push the vegetables to the side of the skillet and crack the eggs into the empty space. Cook the eggs to your desired level of doneness.
  5. Season the hash with salt and pepper, and mix everything together gently.
  6. Divide the hash onto plates and garnish with fresh parsley.
  7. Serve hot and enjoy!
