Ingredients
- 2 medium sweet potatoes, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 4 eggs eggs
- 2 tablespoons olive oil
- 1 Salt and pepper to taste
- 1 Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the diced sweet potatoes and cook until they start to soften, about 8-10 minutes.
- Add the diced onion, minced garlic, and red bell pepper to the skillet. Cook until the vegetables are tender, about 5-6 minutes.
- Push the vegetables to the side of the skillet and crack the eggs into the empty space. Cook the eggs to your desired level of doneness.
- Season the hash with salt and pepper, and mix everything together gently.
- Divide the hash onto plates and garnish with fresh parsley.
