Beef Sinigang
A classic Filipino sour soup featuring tender beef, vegetables, and a tangy tamarind broth. This hearty and flavorful dish serves 4 people.

- ½ lb beef shank or ribs, cut into serving pieces
- 5 cups water
- ½ medium onion, quartered
- 1 medium tomatoes, quartered
- ½ radish, peeled and sliced
- ½ eggplant, sliced
- ½ bunch water spinach (kangkong) or spinach
- ½ medium daikon radish, peeled and sliced
- ½ 2-3 pieces green chili peppers (siling pansigang)
- ½ 2-3 tbsp fish sauce
- ½ packet (about 40g) sinigang mix (tamarind soup base)
- ½ Salt and pepper to taste
Instructions
- In a large pot, bring water to a boil. Add beef and simmer for about 1.5 hours or until beef is tender.
- Skim off any scum that rises to the surface. Add more water if needed.
- Add onions and tomatoes. Simmer for another 10 minutes.
- Dissolve sinigang mix in a cup of water and pour into the pot. Add the daikon radish and radish. Simmer for 5 minutes.
- Add the eggplant and green chili peppers. Simmer for another 5 minutes.
- Season with fish sauce, salt, and pepper to taste.
- Add the water spinach and cook for an additional 2 minutes until wilted.
- Adjust seasoning if needed. Serve hot with steamed rice.
