Ingredients(scaled)

  • 3 ½ oz semi-sweet chocolate, chopped
  • ½ 1/4 cup unsalted butter
  • 1 ½ large eggs, separated
  • ½ 1/4 cup granulated sugar
  • ½ cup heavy cream
  • ½ tsp vanilla extract
  • ½ Pinch of salt

Instructions

  1. Melt chocolate and butter in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  2. In a separate bowl, whisk egg yolks with half of the sugar until pale and thick. Stir in the melted chocolate mixture and vanilla.
  3. In a clean bowl, whip egg whites with salt until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.
  4. In another bowl, whip the heavy cream until soft peaks form.
  5. Gently fold the whipped cream into the chocolate mixture until well combined.
  6. Fold in the whipped egg whites in two additions, being careful not to deflate the mixture.
  7. Divide the mousse into serving glasses or bowls. Chill in the refrigerator for at least 2 hours to set.
  8. Serve chilled, garnished with shaved chocolate or a dollop of whipped cream.
