- 3 ½ oz semi-sweet chocolate, chopped
- ½ 1/4 cup unsalted butter
- 1 ½ large eggs, separated
- ½ 1/4 cup granulated sugar
- ½ cup heavy cream
- ½ tsp vanilla extract
- ½ Pinch of salt
Instructions
- Melt chocolate and butter in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
- In a separate bowl, whisk egg yolks with half of the sugar until pale and thick. Stir in the melted chocolate mixture and vanilla.
- In a clean bowl, whip egg whites with salt until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture until well combined.
- Fold in the whipped egg whites in two additions, being careful not to deflate the mixture.
- Divide the mousse into serving glasses or bowls. Chill in the refrigerator for at least 2 hours to set.
- Serve chilled, garnished with shaved chocolate or a dollop of whipped cream.
