Ingredients(scaled)

  • ¾ lbs red potatoes, scrubbed and diced
  • ½ 1/2 cup vegetable broth
  • 1 ½ tbsp apple cider vinegar
  • 1 tbsp whole grain mustard
  • 1 tbsp olive oil
  • ½ small red onion, finely chopped
  • ½ 2-3 small dill pickles, finely chopped
  • ½ Salt and pepper to taste
  • ½ Chopped fresh parsley for garnish

Instructions

  1. Boil the diced potatoes in salted water until tender, about 10-12 minutes. Drain and set aside.
